amptowl, your carrot and orange soup was delish. It really woke up my tastebuds, after a winter of eating stodgy things. I made it quite thin in the end, and only a bit blended, for texture. Next time I might try adding a small amount of garlic. I've used garlic and orange together in salads before, and they go together rather well.

Serves 2-4
3-4 medium/large carrots, diced
1 medium potato, diced
1 medium onion, chopped
1 orange (juice and zest)
1 pint of good chicken or vegetable stock
dash olive oil
salt and pepper to taste
This soup is quick, easy and light. In a saucepan, gently fry the onion in the olive oil, until glassy and soft. Add diced potato and carrot and turn over for a couple of minutes in combine the flavours. Pour over the stock, bring to the boil then cover and simmer until vegetables are soft. Add the zest and juice of the orange, season to taste, and cook for a further 5 minutes. Remove from heat and puree the soup. Serve with crusty bread or garlic bread! Yum!
