I have that problem with porridge so often it's not funny. I've experimented with different timings, stirrings, oat-to-water ratios, oat-to-milk ratios, windspeed and even brand of oats. Totally unpredictable.
My conclusion? Porridge is an alien life form sent to drive me insane every morning for the whole of winter. GRRR! (Wouldn't matter but it's so yummy when it's just right, with a little honey and a pinch of cinnamon.. *whimper*)
