Your last post about the Buche de Noel reminded me I have quite a good recipe for it from Beranbaum's always reliable Cake Bible. I like her recipes not only for their completeness and precision, but also because they normally have advice that's useful even if you're making someone else's recipe. If you like I could email you it? It covers the cake, filling, ganache and rather good meringue mushrooms. (Also meringue pine needles, though I don't think they really work out to scale with the log.)
